Shrimp Sandwich

This shrimp sandwich has is full of flavor and it’s super simple to make. It’s great for an easy weeknight meal or lunch.

Have you heard of a lemon cucumber?  I had never heard of a lemon cucumber until my mom grew them in her garden one year. I have got to say, they are delicious! The name says it all, it tastes like a cucumber with lemon added. These cucumbers are not long and green, they are round and yellow.

This sandwich is so good you just might want another one. I sure did, anyway! The lemon in the dressing ties in with the lemon cucumber. The arugula is peppery so it adds a bite to the sandwich. There are a lot a flavors which is why I think it is so good.

This recipe is very versatile. If there is something you want to add or take away it should still taste delicious. If you don’t want the bread this can easily be made into a salad. Just dump everything into a bowl, add the dressing, stir, and enjoy. You may just want to lick the bowl!

Shrimp Sandwich

Ingredients

  • shrimp, however many you wish to eat
  • 1 yellow pepper
  • 1 lemon cucumber ( if you can't find a regular one will work)
  • 1 tomato
  • arugula
  • 1/4 C olive oil
  • juice of 1 lemon
  • 2-3 garlic cloves, minced
  • salt, to taste
  • pepper, to taste
  • dash of cayenne pepper
  • Ciabatta rolls or bread of your choice

Instructions

  1. Cook shrimp in skillet until done. 

  2. Whisk together olive oil, lemon juice, garlic, salt, pepper, and cayenne pepper-brush on bread and shrimp. 

  3. Assemble shrimp and veggies on bread. Enjoy!
