Granola is versatile. You can have it in a bowl with milk, add it on top of yogurt or ice cream, or eat it by the handful out of the container (I hope I’m not the only one to do this, ).
My favorite granola memory, yes I said granola memory, was when I would spend the night at my grandparents house we would have a “midnight snack” which was vanilla ice cream with granola on top. Eating it this way is so good.
My favorite part of granola are the chunks. So, if you also like the chunks you will need to cool the granola completely before you do anything, do not stir it. When you take it out of the oven there will not be any chunks, they will form once cooled.
What I like about this recipe is that it’s not too sweet.
Oat & Honey Granola
- 3 cups oats
- 1 cup sliced almonds
- 1/3 cup unsweetened coconut
- 2 tsp vanilla extract
- 2 Tbsp coconut oil, melted
- 1/3 cup + 2 tsp honey
- dash of salt
Preheat oven to 300°F
Stir together melted coconut oil, vanilla extract, honey and salt. Add in oats, almonds, and coconut. Stir until combined.
Spread mixture onto a baking sheet coated with cooking spray or parchment paper.
Bake for 25 min or until lightly browned. Let cool completely on the baking sheet if you want granola chunks. Stirring too soon will result in all loose pieces and no chunks.
Store in an airtight container.
