I love it when fresh cherries are in season. I buy a lot of them, my kids love them! But what do you do when you buy them and then nobody eats them anymore? Make ice cream of course!
That is how this recipe came about. My family got cherried out and I didn’t want them to go to waste so I had to do something with them.
This is an easy recipe, the longest part is taking the pits out of the cherries. It is also a bit messy unless you have a cherry pitter. I am thinking I may need to get one. The ice cream is loaded with pieces of fresh cherries, raw almonds, and dark chocolate chunks. You can also use semi sweet chocolate if you prefer. If cherries aren’t in season you can use frozen.
Cherry Almond Chocolate Chunk Ice Cream
Ingredients
- 1 1/2 cup milk (2% or whole)
- 2 cup heavy cream
- 3/4 cup sugar
- 2 tsp almond extract
- 1 tsp vanilla extract
- 1 cup fresh cherries, pitted and cut into fourths
- 1/2 cup raw almonds, chopped
- 3 oz dark chocolate, chopped
Instructions

In a medium bowl whisk together milk and sugar until sugar is dissolved.

Stir in heavy cream, almond extract, and vanilla extract.

Freeze ice cream in your ice cream maker according to the manufacturers' instructions. Add the cherries, almonds, and chocolate during the last 5 minutes of mixing.
