I scream, you scream, we all scream for ice cream! Ice cream puts a smile on everyone’s face and I have yet to meet someone who doesn’t like it.

Homemade ice cream is what summer is about. This summer it has been hot and I wanted a dessert that was cool, refreshing, and light. Enter in fresh peach ice cream. This is the perfect dessert to help cool you off in the heat.

What makes ice cream so great? It is so versatile. You can add just about anything to it and it will be good. I make homemade ice cream for every birthday party and I try to make a different flavor for each one. I try to do a flavor that is a favorite for the guest of honor and of course I do have to put a small twist on it.

The peach ice cream I made for a family bbq. I love white peaches because they are so sweet so in this recipe I used all regular peaches and added in one white peach. I had to do something a little different so I macerated the peaches in almond extract. The almond extract is what sets this peach ice cream apart from the rest. If you don’t have almond extract you can use vanilla extract, but it is worth it to go buy some or borrow from a neighbor. Adding the juice from the peaches into the base of the ice cream results in a nice light peach flavor.

I served the ice cream with my homemade pecan shortbread. It’s a match made in heaven.

Fresh Peach Ice Cream

Ingredients

  • 1 1/2 lb peaches, peeled, pitted, and chopped
  • 1 cup milk (whole or 2%)
  • 1 1/2 cup heavy cream
  • 1 cup sugar, divided
  • 1 tsp vanilla extract
  • 2 tsp almond extract
  • 1 1/2 Tbsp fresh lemon juice

Instructions

  1. In a small bowl combine peaches, 1/4 cup sugar, almond extract, and lemon juice. Stir to combine and let sit for 2 hrs or more to macerate in the juices.

  2. In a medium bowl, whisk together milk and the remaining sugar, until sugar is dissolved.

  3. Stir in heavy cream, vanilla extract, and juice from peaches. Whisk until combined.

  4. Pour mixture into ice cream freezer and freeze according to the manufacturers' instructions. Add the peaches in the last 5 minutes of mixing.

This ice cream will definitely help you beat the heat. Enjoy!
