Oat & Honey Granola

This Oat and Honey Granola will become a staple in your home. I say this because…

granola is versatile. You can have it in a bowl with milk, mix it in with berries, add it on top of yogurt or ice cream, or eat it by the handful out of the container (I hope I’m not the only one to do this, ).

Granola is one of my favorites but I don’t eat it very often because it is loaded with sugar. It has the warm brown sugar, white sugar, plus it might have maple syrup, molasses, and/or honey mixed in. That’s a lot of added sugars. This recipe only has one form of sweetener, honey. And there’s not that much added. 

This recipe is a great alternative to the high sugar and calories of what you’ll buy from the grocery store.

This granola has the right amount of sweetness. By using unsweetened coconut it helps to bring the sweetness level down. However, if you have a big sweet tooth then go ahead and use the sweetened coconut. I haven’t tested the recipe with the sweetened so I’m not sure how sweet it will be.

My favorite granola memory, yes I said granola memory,  was when I would spend the night at my grandparents house. We would have a “midnight snack” which was vanilla ice cream with granola on top.  Eating it this way is so good. Have you tried this?

One of the best parts of granola are the chunks. They’re a favorite of mine. What about you? If you said yes then you will need to cool the granola completely, do not stir it! When you take it out of the oven there will not be any chunks, but they will form once it’s cooled. Then you can break it up however you’d like.

If you said no to the chunks, then once you take the pan out of the oven stir it up. You should not get any big chunks.

Oat & Honey Granola

Ingredients

  • 3 cups oats
  • 1 cup sliced almonds
  • 1/3 cup unsweetened coconut
  • 2 tsp vanilla extract
  • 2 Tbsp coconut oil, melted
  • 1/3 cup + 2 tsp honey
  • dash of salt

Instructions

  1. Preheat oven to 300°F

  2. Stir together melted coconut oil, vanilla extract, honey and salt. Add in oats, almonds, and coconut. Stir until combined.

  3. Spread mixture onto a baking sheet coated with cooking spray or parchment paper.

  4. Bake for 25 min or until lightly browned. Let cool completely on the baking sheet if you want granola chunks. Stirring too soon will result in all loose pieces and no chunks.

  5. Store in an airtight container.

    What is unsweetened coconut? Coconut flakes? Coconut milk?

      You can buy coconut (flakes, shredded, chips) that has added sugar. Unsweetened coconut is just coconut, nothing added. I used shredded, but you can use whatever you have on hand. If you don’t have unsweetened coconut the sweetened will work as well, it’ll just be a little sweeter. Thanks for stopping by!
