Who doesn’t like a chocolate chip cookie? I love, love, love them and will raise my hand high and proud and stand on the highest rock and shout “I love chocolate chip cookies!” And yes please, I would like another or how about the whole plate!
I remember when I was a small girl helping my mom make chocolate chip cookies. I was always excited. My mom taught me how to measure the ingredients. The best memory I have is when I put the flour in and turned the mixer on too high and all the flour poufed into the air and onto the counter. I made some messes. Today, I get to share the same experiences with my kids. They love to help mix them up and eat them. Cleaning up is still a work in progress for them.
After many times of making cookies with my mom it was time for me to make them by myself. I decided to do this when my parents were not home. I was scared because I thought I would get into trouble for not asking but the cookie has a special power and everyone seems to want them. I got a big THANK YOU from my parents and that gave me a big SMILE. From then on I would make them whenever I felt the urge and I quickly had the recipe memorized.
My favorite time to bake chocolate chip cookies is when it rains. I don’t know why, but the coolness outside and the warmth and smell inside is comforting to me. Here in Southern California it doesn’t rain much so I just bake them usually when my kids beg me to.
I like to experiment with recipes and even though the one I have been making forever is good, I wanted to try to make it better. I increased a little of this and added a little of that. These cookies are a bit chewy and full of chocolaty yumminess.
Chewy Chocolate Chip Cookies
Yield: 3 dozen cookies
Ingredients
- 3/4 C unsalted butter
- 3/4 C brown sugar
- 1/2 C granulated sugar
- 2 C flour
- 1 egg
- 1 egg yolk
- 3 tsp vanilla extract
- 1 tsp salt
- 1 tsp baking soda
- 2 tsp cornstarch
- 2 C semi sweet chocolate chips
Instructions

Preheat oven to 375° F

Cream together butter and sugars. Add in vanilla extract.

Add in egg and egg yolk.

Add in flour, baking soda, salt, and cornstarch. Mix throughly

Stir in chocolate chips.

Drop by spoonful onto ungreased baking sheet.

Bake for 9-12 minutes. Immediately remove from baking sheet and cool on wire rack.
