Perfect Banana Bread

I always seem to have one stray banana left on the counter that nobody wants to eat, so I put it in the fridge and wait until I collect enough to make some bread with them. The best part of making homemade banana bread is the way it makes the home smell. This is one of my favorite quick breads and has many memories attached to it.

This bread is easy to make. My childhood memories of my mom making banana bread will stay with me forever. My hope is to have my kids experience the same thing and enjoy the memories each time they smell banana bread baking.

The smell of my house while the bread is baking is the best. My daughter Emily, kept asking me if it was time to eat it. Waiting for it to cool enough to take out of the loaf pan so it doesn’t fall apart is the hardest part. Emily must have asked me ten times if it was ready yet. She said, “it just smells sooo good, I caaaan’t wait anymorrre!” Now, that’s a nice compliment to hear.

This banana bread recipe is perfect. It is perfectly moist, tender, has the right amount of banana flavor, and the perfect amount of sweetness.

Recipe Note: The key to getting a lighter texture and not a dense one is to beat the butter and sugars for at least 3 minutes. This will get air into it which will create the nice, light texture.

Also, get your kids involved in helping make the bread. They make good banana smashers!

Perfect Banana Bread

Ingredients

  • 1/2 Cup butter
  • 1 tsp vanilla
  • 2 eggs
  • 4 bananas, mashed
  • 2 Cup all purpose flour
  • 1/2 Cup granulated sugar
  • 1/4 Cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 350°F

  2. Beat together butter and sugars. Beat for at least 3 minutes. (Don't skip this step, it's very important to the texture)

  3. Add in vanilla and eggs. Beat until combined. Add in bananas.

  4. Add in flour, baking soda, baking powder, salt, & cinnamon. Mix until well combined.

  5. Pour batter into a greased 9x5 loaf pan. Bake for 50-60 minutes, or until toothpick comes out clean.

    Just made this. It is amazingly moist. Beating sugar and butter 3 min or longer did the trick.

    Should the butter be cold…room temp?? Not melted right??

      Don’t melt the butter. My butter was cold, but you could do room temp also. Just make sure you beat it for a couple of minutes to get the air in and make it fluffy. That’s the secret! I hope you enjoy it, Amanda. Let me know how it turns out for you.
