We eat a lot of salads. So I want to share my favorites with you.
What makes salads so GREAT
- It’s a dinner I can make ahead of time on the night my kids have gymnastics. When we get home we can have a nice healthy meal and not have to worry about cooking anything.
- They are versatile
- They are healthy
- It’s great to have on a hot summer day.
These salads are a staple in my home. Any recipe that has white or brown sugar in the salad dressing I did not put it in and the salad was still gobbled up.

Spring Spinach Couscous Salad with Maple Mustard Dressing (Gringalicious) I added Chicken to make it a whole meal
Spring Pea Quinoa Salad (eat spin run repeat) I used half arugula (too spicy for my kids) & half spinach & added chicken
