When I think of summer one of the many things that comes to mind is grilling or barbecuing. I also think of all the fruits and veggies that are in season and recipes that I’ll be able to make. I love grilling because there is less of a mess to clean up and I get to experiment. I have learned that you can pretty much grill anything, it’s awesome!
We had a charcoal bbq for many years and would only use it a few times a year. I was able to talk my husband into getting a gas grill this last Spring. We absolutely love it! We got a Char Broil Grill for a great price. I have become the main griller in our household and I have so much fun!
We usually have a plethora of zucchini in the summer. My garden this year so far has only produced two! I can’t believe it and I’m not sure what is going on, the rest of my veggies aren’t doing that great either. So I have to get my zucchinis at the Farmers Market instead.
Anywho, zucchini is a staple in our home and grilled zucchini, well…, I could eat it everyday. If you don’t have access to a grill you can still make this in a pan on your stove top. I slice my zucchini in strips ( I think it tastes better, I know I sound like my toddler, LOL), not too thin, and place it on the grill. It only takes a couple of minutes on each side. I like to get the dark grill marks before turning. Once they are done I take them off and coat them with the dressing. I don’t use too much because the zucchini will get soggy.
I made this zucchini for my 40th birthday party. Since I wanted my party day to be as easy as possible I made this the day before. I grilled the zucchini, not as long as I normally do, and put in the fridge. The next day I warmed it up in the oven and when I took it out I put the dressing on it. It turned out great and it wasn’t soggy.
We eat a lot of chicken in our home so I serve this with chicken that I grilled. When I grill I try to make the entire meal on it so I don’t have to dirty my kitchen because who wants to do dinner dishes on a summer night?!
Grilled Zucchini
Ingredients
- zucchini (however many you eat)
- 1-2 Tbsp olive oil
- 2 tsp oregano
- 1 garlic clove, minced
- dash of salt
Instructions

Heat your grill to medium high (about 400°F). Cut zucchini into strips.

In a small bowl mix together remaining ingredients and set aside.

Place zucchini on grill and turn over after 2-3 minutes. Keep your eye on it, depending on how hot the grill is it may take longer or shorter per side. Remove from grill and coat zucchini with dressing. Use the amount you like. I use a small amount because I don't want to make the zucchini soggy. Serve warm or cold.
