Do you like berries? How about whipped cream? Um, yes!!!! This is the recipe for you! It’s a super simple cool treat to make.
It is perfect for Valentines Day, a hot summer day, or just any day really!
To make these all you need to do is puree some berries, whip up some cream and fold the two together. You can use fresh or frozen berries. I used what I had on hand so the berries were frozen and a combination of blueberries, blackberries, and raspberries.
Use a combination of berries or just one type, this is a versatile recipe and can be changed to suite your taste preferences.
You can put them in some cute molds (the kids will love this), or just spoon them out onto a baking sheet or plate and place them in the freezer. I had heart molds and they turned out really cute.
Anyway you make them they will be a hit! They are low in sugar, and light and airy.
You may need to adjust the sugar level according to your tastes and also to the sweetness of the berries. I originally started out with 2 tablespoons of sugar but had to increase it because my berries weren’t very sweet and the final product was a bit tart. Once I increased the sugar 1 tablespoon it was just right. Not too sweet and not too tart.
Frozen Berry Whips
Ingredients
- 1 cup heavy whipping cream
- 3 Tbsp powdered sugar
- 1 tsp vanilla extract
- 1/2 cup mixed berry puree
Instructions

In a food processor puree 1/2 cup of berries. If you are using frozen berries let them thaw before you puree them. Set aside.

In mixing bowl, with the whisk attachment, whip the whipping cream on high. Gradually add in sugar and vanilla. Mix until stiff peaks form.

Fold the berry puree into the whipped cream. Fold until combined.

Spoon mixture into molds (if using) or onto a baking sheet lined with wax paper. Place in the freezer until frozen, about 1-2 hours. Once frozen eat them up or place in an air tight container and keep in the freezer.
