Fudge is the one must make treat for Christmas. I only make it once a year, give half away and the rest it takes us the month of December to finish it.
This fudge recipe I got when I was in my 7th grade Home Economics class. We made it in class and I took the recipe home and made it for my family. Since 7th grade, so that would be for 29 years this is the only fudge recipe I make (oh my, I sure feel old now! LOL!). I have tried others in addition to this one but they just don’t compare.
Since I got this recipe 29 years ago I have no idea who the original recipe maker is. I am not taking credit for this great creation. I just want to share it with you.
Unlike a lot of fudge recipes this one does not use sweetened condensed milk. It does require use of the stove and a double boiler. It takes a little more effort but it is so worth it and you will be glad you made it. And no candy thermometer is needed, just a clock.
To make this recipe as easy as possible bring the sugar and evaporated milk to a slow boil for 6 minutes. While this is boiling melt the marshmallows in the double boiler.
Word of caution: The sugar and milk needs to have a close eye kept on it. It can very quickly boil over if your heat is too high. It will boil up to the top of the saucepan but if you stir it and keep the heat low you will be fine. I have had mine boil over many, many times but found the trick that I just shared so no more boil over.
Once the six minutes are up you will put the sugar and milk into the melted marshmallows, stir it up and then pour over your bowl that has the rest of your yummy ingredients… chocolate chips, butter, vanilla extract, and nuts.
Stir this all up until it is smooth and then pour into your prepared pan. Place it in the refrigerator and then lick the bowl and spoon.
I make my fudge without the nuts because I enjoy the smooth, slight chew and oh so creamy texture.

The Best Old Fashioned Chocolate Fudge
This fudge is smooth, creamy, and slightly chewy. It will be the best old fashioned chocolate fudge you have had.
Ingredients
- 1 12oz. package of semi-sweet chocolate chips
- 1/2 cup butter, cut into pieces
- 1 tsp. vanilla extract
- 1 c chopped nuts (optional)
- 2 c granulated sugar
- 3/4 c evaporated milk
- 10 large marshmallows
- 1 Tbsp water
Instructions

Butter a 9x9 in pan and set aside.

In a large bowl combine nuts (if using), chocolate chips, butter, and vanilla extract. Set aside.

In a double boiler combine marshmallows and water. Stir occasionally.

While the marshmallows are melting, in a medium saucepan stir together sugar and evaporated milk. Bring to a slow boil and then turn down heat to low and continue boiling for 6 min. Stir occasionally and keep a close eye on it.

After the 6 minutes pour the boiled milk mixture into the marshmallow mixture and stir to combine. Then pour this mixture over your prepared bowl of chocolate and stir. Stir until the mixture is smooth. This will take a couple of minutes.

Pour the fudge into your prepared pan and let it set in the refrigerator until firm.
