Cinnamon rolls seem to be the most popular sweet roll. But there are so many variations to the sweet roll. My variation today is a double berry swirled roll…strawberries and raspberry flavors…hug the entire roll.
Who doesn’t like a sweet roll? With a hot cup of coffee or tea to go along with it, it makes for a very comforting snack or meal. Or along with a nice breakfast or even have them for dessert…there is no wrong time to eat them.
My favorite part of a sweet roll is the middle ring where it is full of the gooey goodness of the filling and icing. Are you a fan of the middle or the outside? Let me know in the comments.
For these double berry sweet rolls I have added raspberry flavoring to the dough. The inside is then loaded with fresh strawberries, raspberry jam, and a little more raspberry flavoring. It’s then topped with a powdered sugar icing with hints of lemon.
This recipe does make a very pretty roll, with the red colors from the berries and the yellow from the lemon zest. They are a ray of sunshine on a plate.
When you prepare the filling you will mix the strawberries with sugar (you may use less or more sugar than the recipe says depending on the sweetness of your berries) and the raspberry flavoring. Take a bite of it and then try as hard as you can not to eat the entire bowl! It is absolutely delicious!
The dough can be placed in the freezer if you want to make them ahead of time or can be kept in the fridge for a couple of days prior to baking. Let them come to room temperature so they can rise prior to baking.
Before you start making these I do need to warn you that these rolls are a bit messy to make. If your anything like me you will have flour all over the counter and maybe even a little on the floor. Also, when you go to roll the dough up the filling will ooze and then once you cut them it will ooze a little more. The mess is definitely worth it though!

Double Berry Sweet Rolls
These rolls are filled with fresh strawberries and raspberry jam and then topped with a lemon icing. They are a ray of sunshine on your plate!
Ingredients
- FOR THE DOUGH
- 1 c milk, warmed (105-115 F)
- 2 Tbsp butter, melted
- 1 egg
- 3 1/3 c all purpose flour, divided
- 1/3 c granulated sugar
- 1 tsp salt
- 2 1/2 tsp yeast
- 1 tsp raspberry flavoring
Ingredients
- FOR THE FILLING
- 1 1/2 c fresh strawberries, cut up
- 1/3 c granulated sugar
- 1 Tbsp brown sugar
- 1/2 tsp raspberry flavoring
- 1 c raspberry jam
Ingredients
- FOR THE ICING
- 1 c powdered sugar
- 1/2 tsp vanilla extract
- 1-2 Tbsp milk
- 2 tsp lemon zest
- 1 tsp fresh lemon juice
Instructions

Place the warm milk in the bowl of a stand mixer, fitted with the dough hook, and sprinkle the yeast overtop. Softly stir to combine and let sit for 5 minutes.

Add the egg, melted butter, salt and sugar. Stir to combine.

Add 3 cups of flour and beat to combine. If dough seems too sticky add in more flour, 1 Tbsp at a time. Beat dough at a high setting for 5-7 minutes. At this time the dough should no longer be sticking to the sides of the bowl and should be in a ball.

Let the dough rest for 10 minutes. Make the filling. In a bowl add strawberries, sugars, and raspberry flavoring. Stir to combine and set aside.

On a floured surface rollll the dough into an 18x9" rectangle. Spread raspberry jam and then spread your strawberry mixture on top. Roll the dough up in a jelly roll style and cut into 12 slices.

Place slices into a greased 9x13 in baking pan. Cover with a towel or plastic wrap and let rise, until doubled in size, for 1-1/2 hrs.

Place in a pre heated 375° F oven. Bake for 25-30 minutes.

While the rolls are baking make the icing. Combine all ingredients into a bowl and stir. Add the amount of milk according to how thin or thick you like your icing. Once rolls are done ice them and enjoy!
