This Garlic Lemon Thyme Chicken is quick to prepare and clean up is a breeze.
My family eats a lot of vegetables so this recipe is great for us. You can add as many vegetables as you can eat and you can easily substitute the carrots and brussel sprouts for another kind of veggie. There are also potatoes added to the dish so it makes a hearty meal and you don’t have to prepare anything else.
This is a great meal to make if you are having a busy day or if you just don’t want to do a lot of dishes, which is everyday in my house .
What I like about this meal is while it is baking, I am cleaning up all the dishes and then I usually have about 25-30 minutes where I can do what I like. It might be doing another chore, playing with my kids, or just sitting down and relaxing. This meal also gets eaten up so there are no leftovers.

Garlic Lemon Thyme Chicken
Ingredients
- 2 lbs. Chicken breasts
- 2 lbs. vegetables (some suggestions are broccoli, carrots, asparagus, brussel sprouts, parsnips. I usually use carrots and brussel sprouts, 1 pound of each).
- 1 Tbsp melted butter
- juice of 1 lemon
- 3-4 cloves garlic, minced
- 2 Tbsp olive oil
- 2 tsp thyme
- salt and pepper to taste
Instructions

Preheat oven to 400° F.

Combine melted butter, olive oil, thyme, lemon juice and garlic in a small bowl; mix until combined.

Place the chicken in the center of the baking sheet and place vegetables around the chicken. Sprinkle chicken and vegetables with salt and pepper to taste.

Brush all of the butter mixture on the chicken and vegetables.

Bake for 45 minutes or until chicken reaches internal temperature of 165°. Enjoy!
