Garlic Lemon Thyme Chicken

Ingredients

  • 2 lbs. Chicken breasts
  • 2 lbs. vegetables (some suggestions are broccoli, carrots, asparagus, brussel sprouts, parsnips. I usually use carrots and brussel sprouts, 1 pound of each).
  • 1 Tbsp melted butter
  • juice of 1 lemon
  • 3-4 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2 tsp thyme
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400° F.

  2. Combine melted butter, olive oil, thyme, lemon juice and garlic in a small bowl; mix until combined.

  3. Place the chicken in the center of the baking sheet and place vegetables around the chicken. Sprinkle chicken and vegetables with salt and pepper to taste.

  4. Brush all of the butter mixture on the chicken and vegetables.

  5. Bake for 45 minutes or until chicken reaches internal temperature of 165°. Enjoy!
