Dark Chocolate and Pink Champagne Cake with Ganache filling and Maraschino Cherry Frosting

Ingredients

  • Dark Chocolate Cake:
  • 1 3/4 c all purpose flour
  • 1 2/3 c sugar
  • 2/3 c unsweetened dark chocolate cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1/2 c oil (canola or vegetable)
  • 2 tsp vanilla extract
  • 1 c milk (whole or 2%)
  • 1 c boiling water

Instructions

  1. Preheat oven to 300° F. . Prepare two 8 inch cake pans with parchment paper circles in the bottom 


  2. In a large bowl, add all dry ingredients. Mix until combined. Set aside.

  3. Add eggs, milk and oil to the dry ingredients and mix well.


  4. Add vanilla to boiling water. With mixer on slow speed, slowly pour this into the mixture. Batter will be thin.


  5. Divide batter evenly between cakes pans and bake for 30-35 minutes, or until a toothpick comes out clean.


  6. Remove cakes from oven and allow to cool for about 10-15 minutes, then remove cakes from pans and place on a cooling rack to cool completely.
