Preheat oven to 300°F
Stir together melted coconut oil, vanilla extract, honey and salt. Add in oats, almonds, and coconut. Stir until combined.
Spread mixture onto a baking sheet coated with cooking spray or parchment paper.
Bake for 25 min or until lightly browned. Let cool completely on the baking sheet if you want granola chunks. Stirring too soon will result in all loose pieces and no chunks.
Store in an airtight container.
